This book aims at suggesting a selection of wines to accompany many dishes and represents a lifetime of delightful experimentation on the part of the author. The most satisfying aspect of this experimentation has been the research. There are few subjects to match wine in terms of delight in the quest for knowledge. The muse of wine visited the author when his mother introduced him to champagne with Sunday breakfasts at a very early age. I am most grateful for this early experience which, along with the muse of wine, has never left me. It is trusted that the reader may find the information of some value and suggest the odd avenue of exploration. Remember there are no bad choices for wine with food but there are wines which will greatly enhance particular dishes and make your heart soar.
